Hiatus. Merriam-Webster defines it as: an interruption in time or continuity : break; especially : a period when something (as a program or activity) is suspended or interrupted

This young man did what many of us (at least I know I did) always wanted to do right after college or that middle phase of turning from young adult into a grown up. He packed his bags headed west, took a job for minimal pay and lived off of ramen, eggs and trout. Looks like you really can do anything you want to if you plan well enough and proper discipline.
